James Frazer in the Northern Ireland final of Springboard's FutureChef competition.

On Wednesday 8Th February 2012, James Frazer from 11A1 competed in the Northern Ireland final of Springboard’s FutureChef competition. The competition was held in the SERC, (Downpatrick campus) and was judged by top chefs from many well known establishments such as the Lough Erne Golf Resort and Spa in Enniskillen and The Merchant Hotel in Belfast. James had the strenuous task of preparing and cooking a main course and a dessert, spending only £8 on all ingredients. His main course had to be presented to judges within one hour, leaving him a further 30 minutes to complete his dessert.

 James’s menu:

Pan fried hake fillet, violet potatoes, merguez sausage, baby spinach, julienne leeks with a raspberry vinaigrette.

Chocolate fondant served with a tuile biscuit, vanilla ice-cream and a sugar cage.

 There were 8 competitors from all over Northern Ireland who competed in this competition. All competitors were required to demonstrate a wide range of culinary skill under pressure, in limited time and with a limited budget. James worked superbly to produce dishes that were of a very high standard.

 The Home Economics department are very proud of James and his success and would like to wish him all the best as he considers a possible career in this area. James’s success in this competition is reflective of his hard work, parental support and also the mentoring he received from Jonny Hanna from the Plough Restaurant in Hillsborough.
